From humble beginnings in a shed of a share-house. Made by friends for friends.
The Mill Brewery was founded by Mirek Aldridge in late 2016. Homebrewer turned ‘probrewer’, the eventual opening of The Mill was a dream for over 10 years after many test brews in the garage on a 70L all-grain system.
After 6 months of blood, sweat, tears, and (more than) a few beers renovating an old mechanics workshop, The Mill Brewery rolled open its door in March of 2017. Since then, the bar has been through the ringer of a pandemic and economic uncertainty, taking each in stride to become a fixture of the community.
In 2021, The Mill expanded, building a production brewery in Thomastown, led by head brewer Eli Haines. The Collingwood brewery, under Jackson Potter, still turns out many fan favourites, collaborations, and small-batch experimental beers. You will often find Mirek and the rest of the staff enjoying our beers there, chatting to customers and engaging with the local community.
